Like every Tom, Dick and Mary, I'm trying to make a name for myself on this intra-net thing. It ain't easy, but then again, it's a lot easier than pumping out 250 covers on a Friday night when your grease trap backs up, your dishwasher is too stoned to notice, and you've 86'd the Sea Bass an hour ago and your server just walked in four new orders.

So these food bloggers are keen on making predictions for the coming year; what's hot on menus, what people are eating or craving etc. etc.  

I've seen a bunch of them already.  

Using this template, we at the research laboratories of LFS.com believe we have identified the one dish that is ON TREND with every  mega trend listed in national publications - CURRY.

Classically Simple -  check

Restaurant Grown - check

Dining out...in - check

Inherent health - check

There are other reasons why we believe Curry will be the breakthrough menu item in 2010. These reasons have to do with geo-political factors, and the China threat. 

The Brits long ago succumbed to the inexhaustible, always addicting, nuances of curry.  I believe that both MI 6 and the CIA have studied curry and identified its usefulness in the long struggle ahead against China.  Just look around: curry is everywhere.  Even Mark Bittman is pimping curry, on the day after Thanksgiving, nonetheless.  

We need more curry in America.  We really need more engineers, and part of the equation, is making a better curry.  See you thought we were just talking about menu trends here. You didn't realize it was a matter of national security.
